I alreadu upload it a week ago in my Youtube account but I forget to update the recipe  here. */sry… So here you go:

Chicken Satay/Sate Ayam

Ingredients:

2 Garlics

2 Shallots

1/2 cup of Grinded roasted/fried peanuts

1 ts Salt

1 tbs sugar

250 gr Chicken Breast fillet

Kecap Manis/ Sweet Soya Sauce

1 or 3/4 cup of water

oil for saute

Kaffir Lime or any lime you can find in your area

Optional : 6 bird eye chilies (finely grinded)

1/2 ts of salt

1/4 cup of water

(mix it together and the chili sauce is done :D )

Utensils:

Skwers

Griller

Stove

Pan

Cutting Board

Knife

Measuring cup and spoon

Method: 30-50 minutes

Making the sauce:

1. finely chop the garlics and shallots

2. Saute the chooped garlic and shallots until fragrance in medium-high heat

3.add the grinded roasted/fried peanuts and mix it well in low heat.

4. add 3/4 cup f water and mix it well. If you think its too thick, you can use 1 cup of water instead 3/4 cup of water.

5. After mix it well, add 1 ts of salt and 1 tbs of sugar and mix it again.

6. Last touch, add 3 tbs of kecap manis or sweet soya sauce and mix well

Making the chicken


- cut the chicken breast fillet into 1 cm dice. (cube cut or macedoine cut)

- put it into the skewer (3-4 pieces in one skewer)

- add 3 tbs of the sauce and lots of sweet soya sauce on top of it. Mix well.

- Marinate the chicken in 5 minutes and start to grill it. Tips: brush the chicken with the marinate sauce while grilling. It will become more delicious.

- Occasionaly turn the chicken until its cooked. The chicken its easily cooked so be careful.

- After all the satay its cooked, put the rest of the sauce, sweet soya sauce (around 5 tbs spoon or more), kaffir lime juice (half or 1 of it) and mix it together.

- Put the fried shallots on top of it. Serve with nice warm rice. Enjoy <3.

WARNING!: This recipe is VERY SPICY sambal. If you cannot handle spicy so much, just use the regular chili that you usually use.

Ingredients:

1/2 cup of Bird eye chili

1 Tomato

5 Shallots

3 Garlics

5 Candle Nuts (If you cannot find candle nuts, you can replace it with macadamia nuts)

20 gr Raw Shrimp Paste (If you got the toasted one, don’t fry it with the garlics, shallots, and the candle nuts. Just add it when you start to grind all the ingredients)

40 gr Palm Sugar

1 tsp Salt

1 tsp Chicken Powder

Vegetable oil for deep fry

optional : slice of lime

Method: (Overall cooking time: 15-20 minutes)

  1. Fry the garlics, shallots, candle nuts and shrimps paste until golden brown/ crispy about 1-2 minutes in medium-low heat.

  2. Cut the tomato in 8 pieces.

  3. Fry the chili and the tomato until softened or loosen

  4. With mortar and pestle:

    1. Place the friend ingredients in the mortar and grind it well

    2. When the sambal start to smooth add palm sugar, salt, and chicken powder. Grind it well.

    3. Place it in the small plate or container. Add slice of lime on the side.

With food processor:

1. Add the fried ingredients into the food processor and start to grind it.

2. Cut the palm sugar into small pieces and add it into the food processor. Grind well.

3. Add salt and chicken powder and grind it again until mix together.

4. Place it in the small plate or container. Add slice of lime on the side.

NOTE: Raw candle nut has 2 toxic, Saphonin and Pharbal, so make sure you always cook the candle nut before you eat it.

We always use this sambal for dipping sauce. Mostly for tradtional fried chicken or fish, or even eat it with raw vegetables (such as cucumber, long beans, and cabbage). For me, I always use this in many occasions like when I eat KFC or put it in my Fried rice. Hehehe.. I love spicy food.

found these old pic. This pic taken in new year celebration 2010-2011. Still on the wheel chair.. and a big red scar in my right knee (2 weeks old). Dunno why, when I look my face in this pic, I feel so different. like &#8220;is this me?&#8221; hahahahaha XD so much happen in 2011 and I don&#8217;t regret it. In fact, I feel so blessed in 2011, even I&#8217;m feel HIS blessing now. ♥

I just used salt, pepper and lil bit of egg on the minced beef. One of colleague said when the beef not entirely cooked yet (still has blood in the juice if we press the beef), just put the beef on the microwave. This way is more juicy than using the pan only. Well, happy cooking.
